ABOUT
We do one thing.
Evotion started with a simple observation: most events get the bar wrong, and almost nobody notices why. It's not the drink recipes. It's the planning. Not enough staff for the head count, no plan for the twenty minutes when everyone arrives at once, a bar built in the wrong corner of the room, ice that ran out at nine.
We learned this in fine dining, where flavor came from ingredients instead of a bottle of liqueur — fresh citrus, built syrups, nothing artificial. Before that it was restaurants and hotels, which is the same job underneath: read a room, put people at ease, give them a reason to remember it. We started Evotion because every event is a different set of people, and there's something in spending a whole day with a group you've never met, learning how they celebrate, and then doing it again somewhere else the next weekend. For one night you end up feeling like part of the group.
The name is the short version of what we're after. Evolution and motion — a bar that adapts to the room it's in and keeps the night moving.
Today we run bars across the Denver metro and the Front Range: weddings in Golden, holiday parties downtown, backyard birthdays in Littleton, and the occasional drive into the mountains. Different rooms, same job — make good drinks, keep the line short, and be invisible in the way a good bar is invisible.
HOW WE WORK
Three things we don't bend on.
Always early.
Every time. Setup is never rushed and we've never made a client watch us build a bar while their guests arrive.
Real ingredients.
Fresh-pressed citrus and house-made syrups, built the way they were in the dining rooms we came up in. Sour mix has never been in one of our kits and never will be.
The room comes first.
We watch who's waiting, who's alone, and who's had enough. Good drinks are the easy half — the rest is paying attention, and it's the part guests actually remember.
